Fall Energy Bites: Pecan Pumpkin, Lemon Poppyseed & Butterscotch

After a week of running out the door a day late and a dollar short, not to mention practically starving on the days I didn’t get around to the grocery store, I carved out an hour of my Sunday morning to do weekly breakfast prep. I was tired of having the same day-to-day internal debate about whether I had time to make an omelet or if coffee was going to serve as a liquid breakfast.  And, I’ll tell you, you don’t want to have anything to do with me on two cups of coffee and no food in my tummy.

So, this week, I landed on making energy balls, apparently all the rage these days, which was much more enticing an activity than the ones I actually needed to do.  We all know how that goes, don’t we?  Choose the task that you welcome with the least amount of resistance?

I needed to make sure I that have a nutrition-packed breakfast ready to go for each day this week.  It’s going to be another wild one. (But aren’t they all?)

I made three different recipes (and am sharing my favorite ready-to-go option) simply because making only one seems quite lame and, honestly, not a good use of an entire blog post. With that, I give you four kinds of delectable nuggets of goodness:

All of these options are tasty, filling, calorie friendly and good for you!  aVivoPur, which means “to live, ” has a plethora of wellness goodies, and their energy bites have been my go-to over the last couple weeks.  Their bites are made without heat and cooking so that you keep the good enzymes in your food, and there’s no chemicals, preservatives or artificial ingredients.  Just store in your refrigerator until you’re ready to eat.

But if you are into cooking, or should I say “cooking,” (more like assembly) then here are three recipes for you!  I took my three favorite kinds of cookies turned into a more wholesome snack.


PECAN PUMPKIN BITES

INGREDIENTS:

  • 1/2 c oats
  • 1/2 c pumpkin puree
  • 1/2 c pecans, chopped
  • 1/2 c sunflower (or peanut) butter
  • 1/3 c honey
  • 1/4 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 2 tsp flaxseed

  1. Mix all ingredients together in a large mixing bowl
  2. Roll mixture into 1″ balls and place in containers with airtight lid
  3. Store in refrigerator until ready to eat

Notes: 

  • While any nut butter will work here, I’m really liking sunflower butter these days and it added a subtle, nutty but not too sweet flavor
  • Freeze these before eating if you like a harder consistency
  • Freeze any bites that won’t be consumed within the week to extend shelf life.  Eat within 3-4 weeks.

Makes approximately 12 balls.  Adapted from Clean Food Crush.


LEMON POPPYSEED BITES

INGREDIENTS:

  • 1/2 c oats
  • 3 scoops Aloha Vanilla Protein Powder
  • 1 lemon
  • 1 tbsp poppy seeds
  • 1 tsp lemon peel
  • 1/4 c water
  • 1 tsp Stevita (or another sweetener of choice)

  1. Mix all dry ingredients together in a large mixing bowl
  2. Cut lemon into quarters and squeeze the fresh lemon juice onto dry mixture.  Add water.
  3. Roll mixture into 1″ balls and place in containers with airtight lid
  4. Store in refrigerator until ready to eat

Notes: 

  • This recipe, which was recreated with a couple tweaks from Amy’s Healthy Baking, was designed for a plant-based protein.  Amy cautions to not use whey protein powder. Beware.
  • If your love for lemon runs deep like mine, use the whole lemon.  If not, use half to 3/4.
  • Eat within a few days.

Makes approximately 12 balls.


BUTTERSCOTCH BITES

INGREDIENTS:

  • 1 c oatmeal
  • 1/2 c sunflower (or peanut) butter
  • 1/2 c butterscotch chips
  • 1/3 c honey
  • 1/3 c flaxseed
  • 1 tbsp vanilla
  • 1 tsp pumpkin pie spice

  1. Mix all ingredients together in a large mixing bowl
  2. Roll mixture into 1″ balls and place in containers with airtight lid
  3. Store in refrigerator until ready to eat

Notes: 

  • These kicked ass, especially after they set.  We’ve got a winner, folks!
  • Freeze any bites that won’t be consumed within the week to extend shelf life.  Eat within 3-4 weeks.
