Four Brilliant Breakfast Ideas

 

It’s not new news that breakfast is the most important meal of the day.  Breakfast gives you energy and jump-starts your metabolism.  Choosing the right breakfast to fuel your body sets the tone for your morning.

One of my readers asked what I was eating for breakfast during the Save the Liver, Find the Abs challenge.  Generally, the food I consume is lower in carbs and higher in protein, but that’s not to say I don’t treat myself from time to time.  I’m a BIG fan of breakfast food, so I created four different breakfast ideas to help kickstart the week right!


HUEVOS RANCHEROS BREAKFAST TOAST

Perfect for: high protein diets + flavor without the fuss

Ingredients:

Huevos Rancheros Breakfast Toast Ingredients

1 slice whole grain bread, toasted
1/4 c avocado, mashed
1 egg, scrambled
1/4 c black beans, seasoned
2 turkey breakfast sausages, chopped
1/8 c fat-free feta

Instructions: 
Scramble egg and cook sausage according to package instructions.
Assemble your toast in the order ingredients are listed and enjoy!

BANANA, ALMOND & HONEY BREAKFAST TOAST

Banana Almond Butter 3 Toast

Perfect for: sweet seekers + easy assembly

Banana Breakfast Toast Ingredients

Ingredients:
1 slice whole grain bread, toasted
2 tbsp. all natural almond butter
1/2 banana
1/2 tbsp. honey
1 tbsp. sliced almonds

 

Instructions: 
Assemble your toast in the order ingredients are listed and enjoy!

PALEO BANANA PANCAKE

Paleo Banana Pancake Syrup Almond Milk

Perfect for: the carb conscious

Ingredients:
2 eggs
1 banana
1 tsp pure vanilla extract
1 tsp cinnamon

Instructions:

In a bowl, mix together all ingredients, making sure to mash the banana well so there are minimal lumps.

Pour mixed ingredients into a pan set at medium-high heat.  Cook for approximately 3-5 minutes on each side.

Top with bananas, almonds or pure maple syrup!

PANCAKE PROTEIN BAKE

Protein Pancake Bake Cooked

Perfect for: busy mornings – a dish for days!

Ingredients:

Protein Pancake Bake Ingredients

1 C pancake mix
1 1/2 scoops vanilla protein powder
1 C unsweetened vanilla almond milk
1/2 Tbsp oil
1 egg
1 tsp pure vanilla extract
1/8 c chia seeds

Instructions: 

Mix together all ingredients.  Spray a 9″ pie plate with cooking spray and pour in batter. Bake for 20-25 minutes, or until batter starts browning around the edges and is cooked through.
