Warm Irish Cheddar & Kale Dip

Pairs Well With… A chef feature + Guinness + Irish Soda Bread

Cheese makes the world go ’round.  In fact, it should play a part of every meal.

In light of St. Paddy’s Day this week, Chef CJ Callahan Egts from Whole Foods Market Hennepin created this decadent cheese dip recipe with a healthy twist (exclusively for Pairs Well With…) to serve at your upcoming Irish festivities.

Irish Cheddar and Kale Dip Ingredients

Ingredients:

Serves approximately 6 people

1 Tbsp + 1 tsp Irish butter
1 small onion, sliced thinly
3 cloves garlic, sliced thinly
1 tsp crushed red pepper
1 bunch kale, stemmed and torn into small pieces
1 c 0% (non-fat) Greek yogurt
2 egg yolks
1 c + 1/4 c Irish Cheddar cheese, shredded
Salt & pepper to taste

Instructions:

1. Place 1 tsp butter in saute pan and let melt

2. Add crushed red pepper, onions & garlic (+ salt and pepper if you so choose) and allow to caramelize

3. Add Tbsp butter and let melt

4. Add in all kale and wait for it to turn bright green

5. Place in a bowl, and place in freezer – allow to cool

6. In bowl, add yogurt, cheddar, egg yolks, and salt & pepper – mix together very well

7. Add cooled kale/onion mix

8. Place into oven safe vessel for baking and top with 1/4 c remaining shredded cheddar

   9. Place in oven at 425 degrees until the cheese is golden brown and delicious             (approximately 8-10 minutes)

   10. Plate up!

Serve with:

Irish Soda Bread – for maximum Irish authenticity
Crackers – for easy grab and go dipping
Veggies – as a lighter option for the calorie conscious eater
Guinness – for toasting with friends to celebrate being Irish at heart
